Ingredients:

* 3/4 cup cooked quinoa

* 1/2 large red onion, finely diced

* 1 cup finely chopped mushrooms

* A pinch each of salt & pepper

* 1 cup cooked black lentils

* 1 cup finely grated raw beet

* 1 tsp cumin

* 1/2 tsp chili powder

* 1/4 tsp smoked paprika

* Approximately 1/2 cup raw walnuts (crushed or ground into a loose meal)


Instructions:

1. Begin by heating a large skillet over medium-low heat and adding nonstick spray or a drizzle of olive oil. Once hot, toss in the diced onion and sauté, seasoning with a pinch each of salt and pepper.

2. After about 5 minutes, when the onions have softened, turn up the heat to medium and add the chopped mushrooms. Season with another pinch of salt and pepper, cooking until the mushrooms and onions are slightly browned and release their delightful aroma, approximately 3 minutes.

3. Remove the skillet from heat and add the black lentils, mashing them roughly. The goal is to have a textured mash, so don't worry about leaving a bit of chunkiness if you prefer.

4. Transfer the mixture to a mixing bowl and incorporate the quinoa, grated beets, and aromatic spices. For an extra burst of flavor, consider adding a dash of vegan Worcestershire sauce (optional but delightful!).

5. Lastly, gradually add the walnut meal until the mixture holds together well enough to form patties. Pop the mixture in the fridge to chill while you preheat your oven to 375 degrees Fahrenheit or fire up the grill.
